Collaborative Dinner at Texture: 7th September 2017

To mark 10 years, Chef Aggi Sverrisson of Texture will host a series of collaborative dinners with chefs across the month of September.

7th September sees our Executive Chef Vivek Singh collaborate for a gastronomic experience which will see Aggi fuse his signature modern European food, Scandinavian influences and Icelandic produce with Vivek’s flair for modern Indian cuisine. Texture’s Master Sommelier, Clement Robert, will expertly pair wines to each course.

Guests can look forward to canapés from each chef such as lamb seekh kebab in handkerchief bread and mushroom pickle on crisp wheat, and Aggi’s new season Lancaster beetroots with gorgonzola served with Texture’s trademark snow and walnuts to start.

The collaborative dish of Scottish red grouse, spiced leg spring roll, charred sweetcorn and bacon popcorn will be unique to the evening and perfectly fuses the diverse culinary roots of both chefs. Vivek’s Kerala spiced halibut, grilled on banana leaf with green mango chutney and heritage carrot Halwa fudge and Thandhai ice cream will also be on the menu.
