At The Cinnamon Club in Westminster, our 25th year regional series culminates in a five-course Celebration of Western Ghats Cuisine, created by Chef Hitesh Shettigar and priced at £48.
The Western Ghats, stretching across India’s western coastline and mountain ranges, are known for bold spices, coastal produce and forest ingredients. This menu draws from Maharashtrian and Mangalorean influences, weaving together heat, acidity and aromatic depth in a refined fine-dining format.
Chef Hitesh’s inspiration comes from childhood memories of cooking at home and growing up with Maharashtrian and Mangalorean food as part of everyday life. After training at The Ritz London and working under Michelin-starred chef Raymond Blanc, he joined The Cinnamon Collection, where he refined his understanding of modern Indian cuisine. This menu blends that classical discipline with deeply rooted regional identity.
The five-course structure allows for progression from coastal brightness to richer mountain influences, presented with the elegance expected of Westminster dining.
This menu forms part of our 25th anniversary chef-led series across London, alongside Himalayan cuisine in Richmond, Uttarakhand in Covent Garden, Bengali flavours in the City and Pahadi cooking in Battersea.
